When I was little, my mom taught me about a very magical treat: waffles with ice cream. Turning a breakfast food into a dessert? My childhood dream come true.
My adult dream come true? The Wafels & Dinges food truck in New York City. My friend Elizabeth did a lot of research on food trucks before we went into the city, and after seeing this one was on “The Best Thing I Ever Ate” and “Man vs. Food,” added it to our to-do list.
The experience begins with a Belgian wafel (prices starting at $3) and then you pick your toppings (prices vary, but to get unlimited toppings is only a couple bucks extra. I think I paid $7 for my waffle). Toppings can be as simple as butter and maple syrup, as light and refreshing as strawberries or bananas, or as decadent as Nutella, Belgian chocolate fudge, dulce de leche, walnuts or the one that goes down as one of the most delicious things I’ve ever eaten – spekuloos spread. Spekuloos is a Belgian spread that has the consistency of peanut butter but the flavor of a gingerbread cookie.
My waffle was smothered with spekuloos, Nutella, Belgian chocolate fudge, strawberries and vanilla ice cream. I was worried I went a little overboard, but as soon as I took my first bite I knew every choice I had made was right.

There are so many great restaurants in NYC, I normally wouldn’t really consider visiting the same one twice. But I’m pretty sure I’ll make an exception next time I’m in the city. Until next time, Wafels & Dinges…
